Ingredients

  • 2 Eggs
  • 4 Tablespoons of cream
  • 2 Tablespoons Nando' PERi-PERi sauce, flavour of your choice
  • 25 g Sharp white cheddar, grated
  • Small handful (8g) baby kale or spinach
  • Salt and pepper

Cooking Instructions

1 Pour half the cream into a mug
2 Add half the baby kale/spinach
3 Crack in an egg, then pierce the yolk (this prevents it from exploding in the microwave).
4 Sprinkle over half the cheese, 1 tablespoon of PERi-PERi sauce and a sprinkle of salt and pepper.
5 Repeat with the other half of your cream, baby kale/spinach, second egg (pierce the yolk), cheese, PERi-PERi sauce, salt and pepper.
6 Place in the microwave and cover with a piece of paper towel (no one likes cleaning the microwave). Microwave on full power for 1 minute 30 seconds.
7 Microwave in 1 minute increments until the white has set. It should take approximately 3 minutes 30 seconds.
8 Drizzle with more PERi-PERi sauce and enjoy!
