Who doesn't love avocados with this amazing PERi-PERi chicken salad?!
- 60 ml PERi-PERi sauce
- 2 avocados
- 1 tin of drained cooked chickpeas
- 60g thick yogurt
- 1/4 cucumber
- Small handful of cilantro
- Small handful of mint
- 1/2 red onion
- 8 cherry tomatoes
- 120g shredded chicken
1 Mix chicken, cucumber (deseeded and diced), chickpeas, parsley, yogurt and PERi-PERi sauce in a bowl
2 Cut avocado in half, remove the stone (they don't taste so nice), score and scoop out of skin. Plate
3 Place tomatoes on avocado and top with chicken mix. Sprinkle with cilantro, mint and enjoy - it feels good to be good!
