- 4 oz Nando's PERi-PERi, flavour of your choice
- 1 lb pork loin
- 10 oz fresh pineapple
- 1/2 of a red onion
- 1 green bell pepper
- 1/4 teaspoon salt
1 Trim the pork loin and chop into 1.5 inch cubes. Place in a Tupperware for marinating.
2 Trim and chop the pineapple, red onion and green pepper into 1 inch cubes and put into the marinating dish.
3 Stir in the PERi-PREi sauce, and the salt, and mix well. Marinate in the fridge for a minimum of 30 minutes and up to 24 hours in advance.
4 Thread wooden or metal skewers with pork, alternating with red onion, green peppers and pineapple pieces.
5 Light up your grill! Cook the skewers for about 25 mins, turning every 7 minutes or so, until the internal temperature reachers 70ºC
6 Enjoy smothered in more PERi-PERi sauce!
