Craving pizza but trying to cut out gluten? This PERi-PERi chickpea pizza is both delicious and rather simple to make!
- 3 tbsp PERi-PERi sauce
- 1/2 cup grated mozzarella
- 1/2 g chickpea flour
- 1 shredded cooked chicken breast
- 2 tbsp tomato puree
- 2 tbsp olive oil
- 1 cup water
- 1/2 tsp salt
- Arugula, to garnish
1 Place a cast iron pan under the grill (set to hot) with a tablespoon of olive oil
2 Whisk together chickpea flour, water, olive oil and salt to make base and rest for 30 minutes
3 Pour into pan and place under grill for 8-10 minutes
4 While that grills, mix together PERi-PERi sauce & tomato puree to make pizza sauce (pretty simple, right?). When base is cooked, top with the sauce, chicken and mozzarella
5 Place under the grill for another 8-10 minutes for optimal melted cheese delight
6 Slice, add arugula and tuck in!
